Buying produce when it’s in-season not only means it’s going to better tasting, and less expensive, but also better for the environment. We call that a win, win, win. Here's a beautifully bright and tangy in-season salad recipe. It's dressed with Citrus Sunrise and pairs perfectly with it too 🍊
DRESSING INGREDIENTS:
- a splash of Citrus Sunrise
- juice of half a grapefruit
- 1/4 cup olive oil
- 2 tsp mustard
- 1 tbsp honey
- salt + pepper
SALAD INGREDIENTS:
- 1 fennel bulb, thinly sliced
- 1 avocado, peeled and cut
- 2 handfuls of arugula
- 2 grapefruits, peeled + cut
- 2 blood oranges, peeled + cut
- a handful of sliced almonds
- goat cheese (optional)
STEPS:
For the dressing:
Combine Citrus Sunrise, grapefruit juice, olive oil, mustard, and honey. Stir or shake well.
For the salad:
Combine the fennel, avocado, grapefruit, oranges, and arugula in a large salad bowl. Drizzle with the dressing, and season with salt and pepper. Garnish with almonds and goat cheese. Enjoy with the remaining Citrus Sunrise over ice!
