If crisp, refreshing, and slightly zingy drinks are your thing, this Ginger Cucumber Sparkling Mocktail is about to become your go-to. It’s light, energizing, and made with ingredients that feel just as good as they taste.
INGREDIENTS
- Grated cucumber (about 1 inch worth)
- Freshly grated ginger (optional but highly recommended)
- Juice of ½ a lime
- Zest of the lime
- 6-8 fresh mint leaves
- ½ cup sparkling water (pomelo flavored is optional but so yum)
- ½ cup Ginger Boost Better Booch Kombucha (shop here)
INSTRUCTIONS
1. Start by muddling the grated cucumber, ginger juice, lime juice, and lime zest in a bowl.
2. Once fragrant and juicy, strain the mixture into your glass, pressing down with a spoon to make sure every drop of flavor is extracted.
3. Next, scrunch the mint leaves with your hand (yes, really!) to release their aroma, then add them to the glass.
4. Add ice, pour in the Ginger Boost Better Booch Kombucha and sparkling water, and stir gently.
5. Finish it off with your favorite garnish, lime wheel, cucumber slice, lime zest, or extra mint on top.
