Fermentation February: Quick Pickled Onions

These Better Booch pickled red onions are shockingly delicious. They took about 10 minutes to put together, and what a payoff. We are so excited to have them in our fridge for the next few weeks. We'll be putting them on veggie bowls, burgers, bagels, mediterranean platters and salads alike! We used Morning Glory to make these, but any flavor will do. 

You will need:
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1/4 cup +  2 tbsp Better Booch of choice
  • 1 1/2 tbsp maple syrup
  • 1 1/2 tsp salt
  • a pinch of red pepper flakes
  • red onion, very thinly sliced
Steps:

Slice the red onion very thin and stuff into a mason jar. In a pot, combine water, vinegar, 1/4 cup Better Booch, maple syrup, salt and red pepper flakes, and bring to a gentle simmer over medium heat. Pour over the jar of red onions, pushing onions down with a spoon until fully submerged. Wait 10 min to cool. Add 2 additional tablespoons of Better Booch to jar. Wait an additional 20 min until fully  cooled to room temp, serve and enjoy! Cover and store the rest in the fridge. They will stay good for up to 3 weeks.
