Hi friends! It’s the 2nd year of our series where we share simple fermentation recipes - because gut health is important to us, and the science is exciting! Our first one of 2025 is: Beet Sauerkraut with Apple and Ginger. It is a prebiotic, probiotic, postbiotic-rich treat for your gut!
Beet Sauerkraut Recipe:
- 1 beet, cut into matchsticks
- 1 apple, cut into matchsticks
- 1 red cabbage, cut into ribbons (reserve a few whole leaves for later)
- 2 tbsp grated ginger
- 1.5 tbsp salt
Steps:
Add cabbage to a bowl with salt and massage for a little bit to soften it and release some water (you might wanna wear gloves if you don't want stained hands). Add ginger, apple, and beets to the bowl and mix gently until incorporated. Add everything to a glass mason jar (don't forget the liquid!) and smush everything down with a spoon (or any utensil you have handy). This releases more water to cover the mixture. Then, take 1-2 of the cabbage leaves you reserved, and place on top of the mixture. Add a piece of wax paper or plastic under the cap and close the jar. Let it ferment for 5-7 days on the counter, and then store in the refrigerator. Enjoy!
